SAFFRON AND LEMON SWEET TEA



This is such a simple recipe and a good variation to the standard warm water and lemon. The added spices assist with digestion and enhance dosha balance. Plus, it's just yum. This is designed for Autumn/Winter health and contains the tastes of astringent, pungent, sour and sweet. For Kapha types, add some ginger for some extra heat and add less lemon and honey for Pitta body types.



WHAT YOU WILL NEED


  • 1 tablespoon cardamom seeds

  • ¼ teaspoon saffron

  • 1 tablespoon fennel seeds

  • Zest of 1 lemon

  • 1 tablespoon raw honey



METHOD


Boil approximately a litre of water, with the spices and lemon zest for 5 minutes in a medium sized saucepan. Remove from heat, let stand to cool and stir in honey. Strain spices (if you prefer) and enjoy!
