WHAT YOU WILL NEED
2 serves
2 cups filtered water
4 cm piece of fresh ginger, skin still on, sliced into thin pieces
Optional: 1-2 tsp honey or jaggery (unrefined cane sugar)
METHOD
In a small saucepan, add the water and ginger.
Bring to a boil for approximately 1-2 minutes and then take the saucepan off the heat.
Strain the ginger and serve immediately, adding the honey (only at a warm temperature, not hot/boiling) or jaggery (you can add jaggery to boiling water, unlike honey) if desired.
