LEMON LIME TAHINI DRESSING

Tahini is a rich, creamy paste made of sesame seeds. It primarily balances the Vata dosha with its warming and heavy nature. You can source tahini either hulled (with the outer shell/kernel of the seeds removed) or unhulled (shell/kernel left on). Either version provides ample nutrition and health benefits, but eaten just on its own, tahini can be a little sticky on the palette and sometimes bitter (especially the unhulled variety). This simple dressing marries the rich flavour of tahini with a pop of fresh citrus and simple spices. It will take you five minutes to make and brings just about any salad, wrap, cooked vegetable, grain or even protein to life.



WHAT YOU WILL NEED


Serves 1 to dress a salad or another small dish i.e. roast vegetables, meat or baked potatoes/sweet potatoes etc. This recipe can be easily doubled for larger meals.

  • 1/4 cup of hulled tahini

  • Juice of 1 lemon

  • Juice of 1 lime

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Cayenne or black pepper

  • Salt

  • Dash of water


METHOD

  1. In a medium sized bowl add the tahini and citrus juice, stirring gently to combine.

  2. Add the spices, cayenne/black pepper and salt to taste, stirring or whisking with a dash of water until well combined and smooth. It should be slightly running but still creamy. If too thin, add some more tahini and if too thick, add some more water or citrus juice until you get the desired consistency.

  3. Pour immediately over your dish of choice or store in a sealed glass jar to use when needed. This dressing will keep well for up to a week in the fridge.
