This dressing is honestly one of the easiest things to make and I use it often over my salads and vegetables during the warmer months. Coriander, lime and coconut are all Pitta pacifying ingredients to cool, soothe and regulate on overheated system. The flavour profile as a combination of all three ingredients is just divine, bringing your food to life on the plate!
WHAT YOU WILL NEED
8 tbs of good-quality coconut yoghurt
The juice of one large lime or 2 small ones
A large handful of fresh and organic coriander, leaves and stems
Salt and pepper to taste
METHOD
Combine all ingredients, except for the salt and pepper, into a food processor or blender.
Blend on high until well combined and smooth in consistency. If the dressing is still a little thick, add some water or more lime juice.
Pour into a little jug, bowl or container and season well with salt and pepper to your taste.
Drizzle the dressing over a salad, but also works really well over vegetables and grains too!
