Ayurveda is not a vegetarian or vegan based science. It does however, recognise that animal products need to be considered carefully in our diets as they have unique digestive qualities.
We have chickens at The Sattva Centre and eggs are used regularly in my families' diet. Eggs have deeply nourishing qualities and are a good source of protein. For any dosha constitution.
AYURVEDIC FACTS ABOUT CONSUMING EGGS
Contrary to current popular opinion, it is not recommended Ayurvedically to eat eggs every day. Once every few days is best, as eggs are still heavy to digest and your system can build an intolerance.
The egg yolks are very heating for the body and if you are Pitta dominant or suffering from Pitta symptoms, maybe stick to egg whites and leave the yolks for someone else.
Like all animal products, avoid mixing eggs with another animal protein. For example, eggs and bacon. Combined animal products in one meal creates toxicity in your system and is far too hard for the body to digest effectively.
Poached, lightly cooked or baked eggs is ideal. Frying, especially in an animal product like butter, creates deep toxins in the tummy and is no good for you over time.
Eggs are wonderful, I highly recommend them. Just eat them sparingly, simply and from sources that respect and value the beautiful hens that produce them.
