My beautiful bay leaf tree is currently in show off mode. Beautiful deep green foliage, dotted with dainty white flowers. Such a fragrant, delicious herb. ⁣

Bay leaf is particularly beneficial for the Kapha season of mid-winter as its warming properties pacify both Kapha and Vata. Please use sparingly as it is Pitta increasing and can cause too much heat in the body when used in excess. ⁣

However, bay leaf is magic in treating heaviness in the stomach, slow digestion, congestion and respiratory conditions with heavy mucous production (avoid using at the acute stage of infection). It can be used in flavouring rice, daal and soups but can also just be used as a tea (please see my story on how to do it). When adding to food, simply cook with the meal and take out just before serving, similar to kaffir lime leaves. ⁣

Bay leaf also blends well with the flavour profile of black pepper, cinnamon, cardamom and cloves. A perfect base for a winters meal! ⁣
